El chuchito es un platillo tradicional y emblemático de la Gastronomía de Guatemala, elaborado a base de masa de maíz, y generalmente va mezclado de un recado de tomate y con un relleno que puede ser de carne de res o de cerdo. Este chuchito suele ir acompañado de una salsa de tomate y espolvoreado con queso duro de Zacapa.

También existe una variación dulce del chuchito conocido como chuchitos de cambray, que en lugar de ser mezclada la masa de maíz con recado o salsa de tomate, pues se mezcla con el zumo del cambray una fruta tradicional del noreste color morada de Guatemala, y relleno de cambray.

Este platillo es muy común entre la población y es el principal invitado en almuerzos, cenas y celebraciones.

Ingredientes para la salsa

  • 36 tomates
  • 2 large onions
  • 4 red peppers
  • 4 cloves garlic
  • 1 chile guaque
  • 1 chile passes
  • 1 tablespoon fricassee
  • 1 tablespoon sesame seeds
  • 1 cinnamon stick
  • 1 sprig parsley
  • salt and pepper to taste


Ingredientes para chuchitos:

  • 36 pieces of chicken breast cut into 2-inch squares
  • 36 rounds of dough 2 ounces
  • 72 sheets of cob very well washed and clean
  • Cob for 36 strips to


Procedure:

  1. Roast all ingredients except the cinnamon stick and the sprig of parsley. Blend and strain. Place the sauce in a saucepan, add the parsley and cinnamon and cook very well, season with salt and pepper. This sauce should be thick.
  2. Wash the chicken and dry with paper towels. With each ball of dough to prepare an omelette not very thin, about 3 inches in diameter. You can use a plastic bag and form it with a flat plate or with a machine for making tortillas.
  3. Place the tortilla in a cob and carefully pour 2 tablespoons of sauce and a small piece of chicken in each. Close the tortilla, place another corn husk and fold to form the Chuchito cob. Tie with the strip of husk.
  4. Chuchitos Place in a pot, add 2 liters of water. Stopper the chuchitos with plastic and then with the lid of the pot. Chuchitos Cook for 2 hours.
  5. When serving, accompany with tomato sauce and cheese homemade dry.
