This Vegan Peanut Butter Pie is amazingly delicious! A perfectly rich and creamy texture with heavenly peanut butter flavor. It's also keto, gluten-free, oil-free, low-fat, dairy-free, low-carb, and sugar-free!
So... about this Vegan Peanut Butter Pie...I would be lying to you if I told you that I didn't eat this entire pie by myself.
It took me two days, but not a moment longer.
I am not kidding when I say: this may be one of the most delicious treats I've ever made.
Ok let me back up/make a disclaimer: I LOVE PEANUT BUTTER. And pie.
So when the two came together in this glorious combination so perfectly, I just aboutlost it with glee.

Equipment you'll need:high-speedblender, 9 inch pie dish
Ingredients: makes 8 servings
1 package Mori Nu Extra Firm tofu
8 Tbsp peanut flour
1/4 cup granulatedLakanto Monk Fruit Sweetener*(use discount code ANNIE for 20% off!)
1.5 tsp baking powder
1/4 tsp salt
2 Tbsp cornstarch
1/2 cup water (more if needed to facilitate blending)
1 tsp natural butter flavor
1 tsp vanilla extract
1 tsp liquid steviaextract
Optional:
Lakanto Sugar-Free Chocolate Syrup to drizzle on top(use discount code ANNIE for 20% off!)
*Or other granulated sweetener of choice, equivalent to 1/4 cup sugar
Method:
1. Preheat oven to 350F, spray pie dish with non-stick cooking spray, and set aside.
2. Combine all ingredients in high-speed blender, and blend until smooth.
3. Transfer mixture into prepared pie dish, and bake for 30 minutes.
4. Once cooled, drizzle with chocolate syrup, if desired.

Hi Janina! I'm not sure if regular peanut butter would work - you could use peanut flour instead of the PbFit!
