These cauliflower chickpea wraps are my go-to lunch for those busy days when I don’t have time to cook. You can totally meal prep these vegan wraps for a quick and easy meal that comes together in about 45 minutes! This recipe is both simple and delicious. I think roasted cauliflower and chickpeas compliment each other perfectly, and the seasonings and caesar salad spread really take the flavors to another level.

In addition to the roasted veggies, this vegan lunch recipe also calls for a quick homemade caesar salad and caesar salad dressing. I love the combination of warm veggies on top of this cool caesar salad. Wrap it all in a fluffy pita or flatbread and take a bite. Best. Meal. Ever. I really love that you can easily meal prep these so you have a vegan lunch to enjoy all week long!

It’s hard to pick just one part of this recipe that I really like, but I have to say that the roasted cauliflower and chickpea mix is really delicious and are what makes these wraps so special. The veggies are tossed in a flavorful cumin and turmeric-based spice mix and they would also be so tasty on a salad, or as a side to a main dish. Adding onions and smashed garlic to the veggies and roasting them makes it taste even better!

Yup! This recipe is completely vegan. From the roasted veggies to the homemade caesar salad dressing, there are no animal products in this recipe at all. The flatbread I used is vegan, but be sure to check the ingredients of your flatbread if you buy it from a store.

How long does this recipe take?

Start to finish, this recipe will take about 45 minutes to make. That may sound like a long time if you’re looking for a quick meal, but most of this time is spent roasting the veggies in the oven. As the cauliflower and chickpeas are roasting, all you have to do is prepare the caesar salad, which will take about 10 minutes. Once that’s done, you can put your feet up and wait for it all to come together!

How can this be meal prepped?

To meal prep this recipe, I recommend storing the key ingredients in separate glass containers like these to maintain their freshness. So, the roasted veggies will go in their own container, and the caesar dressing and lettuce will be stored separately as well. It’s always best to store salad and dressing separately so they don’t get soggy in the fridge. When everything is stored separately, it will last in the fridge for about a week.

This easy vegan cauliflower chickpea wrap recipe can be made in about 40 minutes!

Ingredients

Roasted Veggies

Ceasar Salad Dressing

  • 1/4 c tahini
  • 2 tbsp fresh lemon juice
  • 2 cloves of garlic, minced
  • 1 tsp mustard
  • 2 tsp capers
  • 1/2 tsp - 1 tsp salt
  • pinch of black pepper
  • 2 - 4 tbsp water

Assembly

Instructions

  1. Preheat oven to 400 F degrees. Line a baking sheet with foil and spray with non-stick spray.
  2. Toss the cauliflower, chickpeas, onions, and garlic together on the baking sheet. Drizzle the olive oil on top of the veggies.
  3. Add all of the seasonings, and toss again until the veggies are well-coated.
  4. Place in the oven and roast for about 40 minutes, stopping to toss halfway through.
  5. Meanwhile, prepare the caesar salad dressing. Add the tahini, lemon juice, garlic, mustard, capers, salt, and pepper to a small bowl. Mix until combined. Add 2 tbsp of water at a time until the dressing is thinned to your liking. Taste the dressing and add more salt or pepper to taste.
  6. Once the veggies are done roasting, remove them from the oven and allow to cool for 5 - 10 minutes.
  7. Meanwhile, warm the flatbread in the oven until they’re soft and pliable.
  8. To assemble the wraps, start by tossing the caesar salad dressing with the lettuce. Spread hummus on the flatbreads and top with the caesar salad. Add the mixed veggies on top and drizzle with any of the remaining caesar dressing. Serve warm and enjoy.
