This Crockpot White Bean Soup with Sausage is filled with vegetables, beans and smoked sausage, making an easy slow cooker soup that is so easy, filling, and comforting.

I am a soup person year round, but I think we can all agree that soup season in the fall and winter is just the best.
Bring in a slow cooker, and you’ve definitely got my attention.
Not only is this Crockpot White Bean Soup with Sausage super easy to throw together, but then it cooks slowly so that dinner is super easy when it’s time!
Serve it up with a loaf of French Bread or some homemade Dinner Rolls and dinner is going to disappear super fast!
How to Make Crockpot White Bean Soup
- Combine everything except the sausage and the parmesan in a slow cooker. You’ll need to chop the onion, garlic, and carrots, but that’s the hardest this gets!
- Let the soup cook on low for 4 hours.
- Add in the sausage, and cook for an additional 2 hours. Check to make sure the vegetables are soft. If they aren’t, let it go for a little longer.
- Serve the soup up topped with the parmesan cheese.
Tips and Tricks
- You can add the sausage in at the beginning if you want everything to just cook together, but the sausage will lose some of its texture. But it does flavor the broth nicely!
- Feel free to throw in more veggies if you want more. Green beans, kale, or corn would all be delicious.
- I love the great northern beans in this soup, but they can easily be changed for another bean.
- Store any leftovers in the refrigerator for up to 3-4 days.

This Crockpot White Bean Soup with Sausage is filled with vegetables, beans and smoked sausage, making an easy slow cooker soup that is so easy, filling, and comforting.
Ingredients
- 2 cans 16 oz each Great Northern beans, undrained
- 1 can 28 oz diced tomatoes, undrained
- 3/4 cup chicken broth
- 3 medium carrots peeled and sliced
- 1 cup chopped onion
- 2 cloves garlic minced
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- 1 bay leaf
- 1 package 14-16 oz smoked turkey sausage, sliced
- 1/4 cup freshly grated Parmesan cheese
Instructions
Combine the beans, tomatoes, broth, carrots, onion, garlic, salt, thyme, pepper and bay leaf in a 5-quart slow cooker. Cook on the low setting for 4 hours.
Add the sausage to the slow cooker and cook an additional 2 hours, or until the vegetables are soft.
Remove and discard the bay leaf.
Top each serving with Parmesan cheese.

I used to love the slow cooker as well, but like you I'm getting a bit too picky to use it that frequently. This cassoulet does sound delicious though and definitely warrants breaking it out!
