      FAQs

What is the secret to good beef stew? ›

The best beef stews are made with the right cut of meat, like chuck roast, brisket or round. Leaner cuts (which are good for the grill) lack the connective tissue that turns into gelatin as it cooks. That keeps the meat juicy and tender while also thicken and enriching the stew.

Can I put sugar in my stew? ›

If you wanted to sweeten your beef stew a little, I would recommend a pinch of sugar (to taste) or, perhaps, some dried fruits (raisins, cranberries, cherries, apricots, etc.).

What can I add to my beef stew to give it more flavor? ›

Add spices such as turmeric, coriander and cumin at the early stage of cooking, when you are frying onions and garlic, to enhance the taste of the beef stew. Fresh herbs like coriander and bay leaves also contribute a distinct flavour without making the dish too spicy for the younger members of the family.

How long do you cook stew meat on stove for it to be tender? ›

Place a lid on top, turn heat down to low, then simmer for 2 hours, stirring occasionally. Remove lid then gently simmer for another 1-1/2 hours, or until the meat is tender and stew has thickened, stirring occasionally. If the stew begins to reduce too quickly before the meat is tender, place the lid back on top.

Why do you add vinegar to beef stew? ›

Tough stew meat will take a couple of hours to get tender, and the vinegar helps this happen as well as add special flavor. Then add the onions, carrots, celery, Brussels sprouts etc and cook until the vegetables are the way you like them.

What does red wine vinegar do to beef stew? ›

Vinegar & optional red wine - Use red wine vinegar and some red wine to give this stew a deep and rich sweet and savory flavor. The wine is optional and can be replaced with additional beef broth, but I do love the complexity it gives to this recipe.

What adds richness to a stew? ›

Other additions and ingredients, mentioned in other answers, can be useful, either during cooking or when added to the finished pot:
      1. Umami, from fish sauce or anchovies, or (less rich) soy sauce.
      2. Salt, sugar, herbs and spices. ...
      3. Mushrooms, sauteed or roasted.

What can I add to stew to make it tasty? ›

If were talking while it's being made; garlic, onion, various herbs, “horse chester sauce” tomato paste, stone ground mustard, or even a small splash of A1 sauce will all “rich up” the broth. So will sauteing the veggies in butter before adding to the stew.

Why do you put baking soda in stew? ›

Unassuming as it may be, this pantry ingredient is nothing short of a powerhouse when it comes to softening vegetables. Adding baking soda to a soup raises the pH and contributes sodium ions, both of which make the pectin that holds many vegetables' cell walls together break down faster.

Why add tomato paste to stew? ›

Tomato paste adds crucial flavor and body to the stew meat when cooked with herbs, garlic and wine. If you don't have any on hand, try one of these tomato paste substitutes.

Why do you put tomato paste in beef stew? ›

A bit of tomato paste amps up the flavor of beef stew, giving it a richness and a punch of umami that makes the stew truly memorable.

How do you deepen beef stew flavor? ›

Getting a more beefy beef stew
      1. Mushrooms (Crimini, sh*take, Lions Mane, etc.), browned beforehand.
      2. Dried mushrooms.
      3. Caramelized onions.
      4. Roasted garlic.
      5. Deglaze your pan (since you don't use wine, deglaze with broth)

What vegetables are good in stew? ›

Although I added carrots, little red potatoes, rutabaga and cremini mushrooms, you have plenty of options. Parsnip, turnip, pearl onions, squash and fennel will also work. Stir them in gently and immediately return the pot to the oven for the final hour of cooking.

Can you overcook stewed beef? ›

Don't overcook it. Simmer, don't boil. It starts out tough but long slow cooking will melt the connective tissue. If you cook past the time when the connective tissue is melted, you boil out all the water in the meat and it becomes tough again, like a well-done steak.

The Ideal Stew Ratio: Two Parts Meat, One Part Vegetable

Most meat-based stews call for tough, inexpensive cuts of meat, while vegetarian recipes include the same onions, carrots, and celery typical of a beef stew. Two parts meat to one part vegetables is the perfect ratio for a meaty stew.
