Alright, folks, it’s time to channel your inner 6-year-old! We’re about to have some fun with this Cookie Monster Blue Spirulina Smoothie Bowl, and you won’t even know it’s good for ya too ;). MMM me likey! (said in my best Cookie Monster voice). See?! Eating healthy can be fun!

So there’s this local cafe here in Columbus, Ohio- Alchemy, that inspired this recipe. They too have a superfood smoothie bowl that they call Cookie Monster, and I get it nearly every time I am there. It’s.so.good. I giggle every time I order it. I also don’t know why it has taken me so long to recreate it at home, with my own idea of what they put into theirs, but I finally did it. It tastes different than their version BUT y’all… “Om nom nom nom, ME WANT MORE!”.

The Smoothie Ingredients

So the creamy smoothie base is made with 6 ingredients to make the perfectly dreamy blue smoothie you just want to dive right into.

Banana. You’ll need 1 FROZEN banana for this recipe. Be sure to freeze the banana the night before. I always keep a bag of frozen bananas in my freezer for when the craving hits.

Avocado. You will need half of an avocado for this smoothie bowl recipe. The avocado adds creaminess and thickens the smoothie up a bit. Not to mention that avocado is a superfood with many nutritious benefits!

Dates. For this smoothie bowl recipe you’ll need 3 pitted dates. The dates not only add some natural sweetness, but also contain fiber, protein, iron, potassium, magnesium, copper, manganese, and vitamin B6! They also contain antioxidants. Yet another superfood in this Cookie Monster Smoothie Bowl.

Plant milk. I used unsweetened flax milk in this recipe for more fiber and omega’s, but you can use any plant milk you’d like. Try to use unsweetened though, if you can.

Spirulina powder. Have you heard of spirulina? I am in LOVE with spirulina powder, not only because it adds the most gorgeous color to foods naturally, but also because of its many health benefits. Read more about spirulina below.

Pure vanilla extract. Make sure it’s pure and not imitation vanilla (not gluten-free)!

The Cookie Dough Topping Ingredients

Now let’s talk about the cookie dough garnish because it’s not to be overshadowed by the gorgeousness of the spirulina smoothie. I took my very popular Almond Flour Chocolate Chip Cookie Dough Bites recipe and instead of rolling the cookie dough into balls, for this Cookie Monster Blue Spirulina Smoothie Bowl we’re just going to crumble it right on top!

Almond flour. In this cookie dough recipe I’m using blanched almond flour. This keeps the cookie dough safe to eat raw, while also providing some great nutrients from the almonds.

Peanut butter. The peanut butter adds a healthy, sticky protein boost to hold the dough together without the use of butter. It also adds a really delicious flavor to the cookie dough.

Pure vanilla extract. Adds a delicious vanilla flavor. Make sure it’s pure and not imitation vanilla (not gluten-free)!

Salt. Brings out the sweetness of the maple syrup.

Maple/agave syrup. Adds some natural sweetness to the cookie dough!

Chocolate chips. Make sure to use dark chocolate chips to cut back on the sugar and that they don’t contain milk. I like to use these cute little mini chocolate chips!

Chocolate covered chia seeds. Chia seeds are perhaps the tiniest little superfood, and when you cover them in chocolate… they’re irresistible! I love sprinkling these chocolate covered chia seeds on this Cookie Monster Smoothie Bowl!

Cacao nibs. Cacao nibs are a great additional topping not only for it’s chocolaty taste, but also for the nutritional benefits.

What Is Spirulina?

Spirulina is actually a type of algae that grows in both fresh water and salt water. You can buy blue spirulina or green spirulina.

Have you ever had blue spirulina? Spirulina is rich in protein, vitamins, minerals, omega fatty acids, iron, and antioxidants. Additionally, spirulina is known for its abundance of B vitamins which naturally enhances energy levels. Look at you, modern-day health-conscious Cookie Monster!

Ingredients

Smoothie

  • 1 frozen banana
  • ½ avocado
  • 3 dates, pitted
  • ¾ cup unsweetened flax milk (or other plant milk)
  • ½ teaspoon blue spirulina powder
  • ¼ teaspoon pure vanilla extract

Toppings

  • cookie dough
  • chocolate covered chia seeds
  • cacao nibs

Cookie Dough

  • 1 ½ cups almond flour
  • ¼ cup peanut butter
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • ¼ cup maple/agave syrup
  • ¼ cup gluten-free, vegan dark chocolate chips

Instructions

First, make the cookie dough. Place all the cookie dough ingredients in a medium bowl and stir together until a dough forms.

Add all the smoothie ingredients to your blender and blend until smooth.

Spoon the smoothie into a bowl and top with cookie dough, chocolate covered chia seeds (optional), and cacao nibs.
