Ingredients
You will need the following ingredients to make this chocolate pudding cake:
- coconut milk
- water
- brown sugar
- cocoa powder
- dark chocolate
- agar agar powder (not flakes!)

Substitutions
In case you need to substitute ingredients here you will see what can be substituted and how:
- Coconut milk - instead of coconut milk, you can use any plant-based milk of your choice. In this case use ⅓ more of agar agar.
- Brown sugar - use the same amount of maple syrup instead of brown sugar to make this pudding refined sugar free.
- Agar agar - the agar agar cannot be replaced since there is no other plant-based gelatine replacement other than this one.
Any ingredient not mentioned above cannot be substituted.
Equipment
This recipe is super easy to make and requires almost no special equipment.
To make this recipe all you'll need is a pan and a pudding mold.
Mold
I used a cylindrical form with a capacity of about 1,000 ml (4 cups). In case you do not have a cylindrical form you can of course use whatever form you have on hand.
In the picture below I used a different mold and the result was great.
You can also divide the pudding into smaller cups creating mono-portions.
Instructions
Here you have a brief explanation on how to make the chocolate pudding cake.
Step 1: Heat coconut milk in a large saucepan.
Step 2: Add in sugar, water, cocoa powder, agar agar and salt.
Step 3: Stir in chocolate and bring to a boil.
Step 4: Pour the mixture into a pudding form and allow to chill. Set in the fridge overnight once cool.
Once the pudding has set, we can remove it from the mold, top it with more cocoa powder or melted dark chocolate and serve it straight away with a scoop of coconut whipped cream.
Hint: Remember to mix the agar agar with little water before adding it to the mixture. Otherwise it won't combine properly.
How to store
You can store the chocolate pudding cake in the fridge for about 3-4 days.
Place it in an airtight container and serve it within 3-4 days.
I do not suggest to freeze the pudding since this will completely change the texture.
Make ahead option
The pudding can be made 1-2 days in advance and removed from the mold once you want to serve it.
If you want to pair it with coconut whipped cream I suggest you make the cream just before serving it.

Ingredients
- 200 ml coconut milk ((⅘ cup)
- 250 ml water ((1 cup))
- 70 g brown sugar ((2½ oz))
- 1 pinch of salt
- 45 g cacao powder
- *120 g dark chocolate ((3½ oz))
- **1 teaspoon agar agar powder
Instructions
Place milk, water, sugar and salt in a saucepan and heat over medium heat.
In a bowl, whisk cacao powder with 4 tablespoon of water until lumps free then add into the milk mixture and stir.
Add in the chocolate and stir until dissolved.
Place agar agar in a glas, add in 1 tablespoon of water, stir and pour into the chocolate mixture.
Bring the mixture to a boil, then simmer for 1-2 minutes.
Pour the mixture into a mold, let it cool completely before placing in the fridge. Allow it to rest in the fridge for a couple of hours before serving.
Notes
* Most of the time dark chocolate is vegan, make sure to check the ingredients to be 100% sure the one you purchase is plant-based.
** The agar agar powder I use is strong, make sure to use enough powder to stabilize 9 deciliter of liquid. Check the instructions on the package to be sure you use it correctly.

Quick and simple! I added a TBSP of maple syrup and a tsp of instant coffee . I think maple syrup goes well with cacao and coconut milk. And mocha is always a win.. Made six small (but decadent) ramekins of pudding.

I'm rating this recipe purely on looks, sorry. I just ordered the cacao powder as I only have sweet and unsweet nibs. I have so much agar agar which I am seeing here is an issue to find. I live in MN and I can get it at any Asian store for under $2. You can even get some at Walmart.com with free shipping for plus members - get a trial. Anywho... I’m in the southern US and believe me when I say it’s hard to find things like agar agar, mochiko, and “specialty” products. I recommend popping into an Asian market or a market that has a customer base that is vegetarian/vegan based on religious beliefs. They always have exactly what I need and it’s a fun bonus to walk around the store and see what you can discover and to try something new! I hope this helps!!

Hello, I am not vegan and would like to try substituting gelatin as I could not find agar agar in my local grocery. (I know other stores may carry it but I was not successful today.) Does anyone know the ratio to substitute gelatin? So far googling has not been helpful. Thank you!

Carlocao, realize you're unintentionally frustrating us Americans when you say powdered Agar is easy to find and inexpensive. Even from Amazon, it's not the case here, especially when compared to non-vegan gelatin one might think you'd suggest as an alternative for non-vegans. It would probably be helpful to let people know that to get the absolutely luscious looking result you post (you're a good salesman!), one wants a firm set of the ingredients. Agar will set up harder (good) and stay firmer at higher temperatures (good), than gelatin. Also good to know, which I believe you touched on, is that flaked Agar, which is a wee bit easier to find here, is hard to get to act like powdered - I get why you are insistent on powdered Agar. From someone who has tried to use flaked and not managed to pull it off, I concur - powdered Agar is the only way to go.

Dear Gene, Thank you for your feedback. I am based in Switzerland and here agar agar powder is sold in almost every grocery store. It is also quite cheap here as well. I obviously cannot talk for every state on this planet 😉 but you should be able to find it even in the US in a health store maybe? Thank you for your comment, I'm sure it will help lots of us ppl! Hi! I’ve never made it with “regular” milk so I’m unable to answer. Coconut milk works perfectly because of its thickness so I’d rather replace it with a thick cashew milk 🙂 i hope this helps.

When I needed agar agar before, I looked everywhere. The only place I was able to find it was a specialty health store and it was very expensive. It is definetely not easy to find unless ypu order it on line. People don't even know what it is.

Yes you can use gelatin even though they’re saying not to because it is an animal product. This is a vegan recipe but you don’t have to make this a vegan recipe. You can use regular milk and gelatin.

You can try but you’d have to add more coconut oil to compensate the missing cacao butter that stabilises the pudding 🙂

It’s a vegan recipe. I’d never suggest to use “regular” milk for ethical and health reasons. You can find plant-based milk everywhere 🙂

There isn’t. Gelatine is not vegan so it’s not an option. But you can find agar agar quite easily in any supermarket 🙂

I can't wait to try this recipe. It looks so good, but I did want to pop in to say I have visited 5 grocery stores, a Whole Foods and a Fresh Market, and none have agar agar. I ordered it off Amazon. Anyway, I live in a medium sized city, so it's not too easy to find in stores. Amazon has multiple different versions though.

Dear Jekaterina, you can use it but the pudding won’t be as creamy. I’d use cashew milk to replace coconut milk if I were you. I hope this helps 🙂
