I love making puddings, they are so much fun to make and eat. Specially when you are having kids around they make a perfect dish to enjoy. I am doing quite a bit of pudding recipe for the past few days, i have one more pudding recipes coming up as well..This pudding is made with tender coconut and it is highly requested in my blog. The tender coconut gives this pudding a lovely taste and i loved it to the core.
About the Recipe
Pudding is a type of food that can be either a dessert or a savoury (salty or spicy) dish that is served alongside the main course. The pudding is unquestionably a British invention, derived from the sausages brought into the country by the Romans in the first century BC. The word pudding derives from the Latin word botellus, which means sausage; the French word boudin derives from the same root. Puddings in the United States are almost always sweet desserts made of milk or fruit juice that has been flavoured and thickened with cornstarch, arrowroot, flour, tapioca, rice, bread, or eggs. The original pudding was made by combining a variety of ingredients
with a grain product or other binder, such as butter, flour, cereal, eggs, and/or suet, to create a solid mass. These desserts can be baked, steamed, or boiled.

Ingredients for Tender Coconut Pudding Recipe :
Tender Coconut :
Tender coconut is fresh, natural, and healthy because it is unprocessed young coconut. It is a pure and delicious energy drink that is high in vitamins, minerals, glucose, fructose, and proteins. It is high in potassium and contains antioxidants.
Gelatin :
It acts as a natural adhesive in foods such as jams, jellies, and gummy candy such as gummy bears.
Sweetened Condensed Milk :
Sweetened condensed milk is cooked until it thickens and becomes a creamy caramel-like pudding that can be used in a variety of dessert recipes. Its delicious on its own, with ice cream, in coffee, or spread on apple slices.

Ingredients
- Tender Coconut Water - 2 cup
- Tender Coconut Flesh - 1 cup
- Sweetened Condensed Milk - ¾ cup
- Milk - 1 cup
- Sugar - ¼ cup to ½ cup
- Vanilla Essence - 1 tblspn
- Gelatin - 2 tblspn
Instructions
Start by taking the gelatin in a sauce pan, cover with water and let it sit for 5 mins. Now heta this gently till it is melted. Set aside.
Now take the tender coconut and the coconut water in a blender and puree till smooth. Set aside.
Take condensed milk, milk, sugar in a pan, heat till it comes to a boil. Now remove it from heat and add in the tender coconut mix, chopped tender coconut, vanilla and gelatin mix. Mix well.
Pour this in a greased mould and let it set for few hours.
Now unmould, slice and serve.

scoop the flesh into a separate bowl |

Now take half of the flesh in a blender |

add some coconut water |

set aside the mix and keep the remaining tender coconut aside |

take gelatin in a sauce pan, you can use agar agar instead of gelatin |

set aside for 5 mins |

now heat this on low heat till it is melted |

heat till it comes to a boil |

take it off the heat and add in the ground tender coconut mix |

Hi,
Ever since my son had tender coconut pudding during one of our visits to Kerala he has been pestering me to make it for him, but i never found a good recipe! Thanks for sharing this, will definitely try! Quick question, how much water should be added to the gelatin?

just 1/4 cup would be fine

I tried the recipe with 2 tbs agar agar, but the pudding did not set...any suggestions if the quantity needs to be increased...can I re add the agar what again and try
