Spinach Lasagna Roll Ups– easy, healthy, and filling! Spinach and ricotta rolled up in cooked lasagna noodles. Only 224 calories per roll! If you’re looking for a healthy dinner recipe, these individual portions of lasagna are for you!
EASY LASAGNA ROLL UPS
The Donut Effect. There’s a little something I like to call the “Donut Effect”.
I eat pretty healthy most of the time. I feel like I’m always trying to convince you guys of that since you’ve seen what I post on here, but I really do.
Don’t get me wrong…I treat myself everyday to a little something.
But when I’ve been really watching it for a while I inevitably break down andindulge insomething sweet…like a donut.
So good! So I think “Wow that was so good and Ididn’t even gainany weight. I actually lost 2 pounds.”
So the next day, I eatfour cookies.That probably won’t affectme at alleither since thedonut didn’tso I won’t even bother weighing myself today.
And even if I did gain weight, I lost weight yesterday so it’s all good.
The next day it’s brownies…but just half a pan…
From there, it’s pretty much a downward spiral.
I fell victim to the “Donut Effect” this weekend. Pizza, Doritos, muffins, cookies (coming soon), 3 Cadbury Eggs, and one Birthday Cake Remix later, I’m feeling the need to eat a little healthier this week.
They are perfectly portioned individual rolls and have all the flavors of a classic lasagna recipe with simple ingredients. Spoon the ricotta mixture down the center.
Sprinkle some mozzarella cheese on top.
These are 6 WW points plus and 224 calories per roll. I added one some garlic and Italian seasonings to the mix which shouldn’t change the points.
I used some pasta sauce I had on hand also added one diced chicken breast to add a little protein so if you add that you will need to adjust your points according to those. You could also add some browned ground beef or Italian sausage.
I was amazed that my boys ate the spinach part without even flinching. Of course my husband had just taken them for a round of golf so they were starving! These are a crowd pleaser.
WHAT TO SERVE WITH THESE?
Serve with a green salad and garlic bread.

Healthy Spinach Lasagna Roll ups are an easy recipe that is healthy and filling. Spinach and a creamyricotta filling rolled up in cooked lasagna noodles. Individual servings of tender lasagna noodles. Only 224 calories per roll!

Servings: 9 lasagna rolls
Ingredients
- 9 lasagna noodles
- 1 (10 ounce package) frozen chopped spinach, thawed and completely drained
- 1 (15 ounce container) ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 teaspoon minced garlic
- 1/2 teaspoon dried Italian seasoning
- salt and fresh pepper
- optional 1 chicken breast, cooked and diced
- 32 oz marinara sauce
- 9 Tablespoons part skim mozzarella cheese, shredded
Instructions
Preheat oven to 350°. Boil lasagna noodles according to package directions. Make sure you drain the spinach well. Combine spinach, ricotta, Parmesan cheese, egg, garlic, Italian seasonings, chicken, and salt and pepper in a medium bowl. Pour about 1 cup sauce on the bottom of a 9 x 13 casserole dish.
Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry by patting them with a paper towel. Take 1/3 cup of ricotta cheese mixture and spread evenly over a noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
Ladle sauce over the noodles in the baking dish and top each one with 1 Tablespoon of mozzarella cheese. Cover baking dish tightly with aluminum foil and bake for 40 minutes, or until cheese melts. Makes 9 rolls.
To serve, ladle a little sauce on the plate and top with lasagna roll and fresh basil.
Notes
Adjust calories and points if you add chicken.

Hi, can you supply the sodium level for this recipe. On restricted diet, so have to be very careful. I used to make a similar recipe years ago, but misplaced the recipe. If I remember correctly, I first put s layer of sauce in bottom of pan, and then topped with the lasagna rolls. It kept the rolls from sticking to the pan and helped surround the flavor throughout the roll.

This sounds so yummy I can’t wait to try it, but more importantly to bake cool and individually freezer wrap. My husband has cancer and so often we come in from a day on the road to and from the Dr and or Hospital to have a lack luster and or meal value dinner. As I read this all I could think about was, “Wish I could have pulled one of these out of my freezer last night!” I will be making these in the next few days. Thank you.

Just got done making these and they’re in the oven baking! I’m so excited to try them. They look DELISH! ♡ I was able to fit 11 into my baking dish, and I feel like I was able to put more than 1/3 of a cup of filling into each also. I was wondering if you think they would go in the microwave instead of being baked in the oven? My boyfriend’s office has no oven and we tried baking them first then putting in the fridge and then reheating them in the microwave, but they weren’t as good anymore. Do you think they could be stored into the fridge after rolling them and then just “baking” them in the microwave ? Have u had any experience with that yet?

Hi! I can’t see a reason why this wouldn’t work but have you tried making them the night before and storing them in the fridge until they are ready to bake? They look delicious but I’d love a make-ahead option for week nights. =)

I’ve been making a similar, but not quite as healthy, version of this for many years. Instead of spinach my recipe uses crab meat. They are called Seafood Lasagne Roll Ups. Yum! I need to try your version some time too. Thanks for sharing.

I made this tonight with a few differences, I used no boil noodles (soaked), and I added mushrooms to the spinach and cheese mixture. It was good, but on the dry side. Any suggestions?? more sauce around the rolls? another egg to the mixture? Im looking forward to making it again, pretty easy for how complicated it appears! yum

This also makes a great freezer meal. I just made it for my sister who had a baby last week. After I roll them I freeze them on the wax paper, then use my food saver to package them once they are frozen. I delivered it to my sister with a loaf of bread and a jar of sauce and was able to give her and her husband 2 meals they can quickly and easily make whenever they need to.

I just cooked these and they are great! I used roasted tomato and garlic tomato sauce instead and mixed in a little mozzarella with the filling. I was preparing for it to take a lot longer but it was super easy especially after a long day at work!

I have made these..don’t remember where I found the recipe. I use whole wheat lasagna noodles and cottage cheese in place of the ricotta! You really cannot tell the difference; they just taste lighter overall. Sometimes I will shred up some fresh spinach..that also gives it a lighter feeling. My boyfriend absolutely loves these!

Just made these for colleagues at lunch! All loved it. I knew people were trying to be healthy, so the portions worked great. I didn’t want to serve a messy lasagna, either.
Thinking about it now, I could have prepped the night before, and just added the red sauce and mozzarella before putting into the oven.
It has the same taste/effect as stuffed shells, but people love the presentation!
In the future, I might venture into adding some shredded zucchini or squash in or on the rolls (I love adding that into veggie lasagna).

Just made these for dinner tonight and my whole family loved them! To save on time, I bought a rotisserie chicken and chopped part of that up to mix in. I have 2 girls, aged 6 and 9 and they even asked for seconds! My 6 year old is very picky and does not eat spinach under normal circ*mstances! This is a keeper!

I made these for dinner last night using this recipe, and they were amazing! My husband, daughter and I are not big spinach eaters, but mixing it in with the cheeses was a great idea. My girl had 2 rolls, and would have gone back for a 3rd. The leftovers we had went to work with the hubster today and I’ve already been asked to make it again. Next time I’ll double the recipe to ensure leftovers for everyone!
