Ingredients for shakshuka hummus toast

  • Beefsteak tomatoes – These thick and juicy tomatoes will hold up to roasting and provide a juicy bite to our toast.
  • Hummus – Hummus is a thick and creamy spread made from chickpeas and tahini.
  • Eggs – Eggs are savory and delicious on top of this toast.
  • Feta cheese – This soft sheep’s milk cheese will provide the perfect tanginess.
  • Ras el hanout – This North African spice blend is warm, savory, and spicy.
  • Whole wheat bread – Whole wheat bread will give us more fiber, and a nutty flavor.
  • Toppings – Black sesame seeds, cilantro, and crushed red pepper flake are my favorite topping blend for this toast. It provides texture, freshness, and a little bit of spice.

Using hummus on toast

Hummus is a versatile dip or spread for any time of day!

It is usually made from blended chickpeas and tahini along with other various herbs and spices, depending on what flavor you make or purchase.

If you’re not familiar with tahini it’s a sesame seed paste similar to nut butter.

And it is widely available at any grocery store or market!

Hummus is a great plant-based protein, which combined with the whole wheat toast here, (which gives us extra fiber) means that this shakshuka hummus toast will keep you fuller, for longer.

What is Ras el hanout?

Don’t be intimidated if you’ve never tried this spice before.

Ras el hanout is a North African spice blend that’s usually made from 10 or more spices such as – cardamom, cumin, clove, nutmeg, peppercorn, and turmeric (just to name a few).

Ras el hanout is easily found online, at spice stores, or in any gourmet market.

If you can’t find it at your local store, no worries! You can easily make Ras le hanout at home with spices you probably already have on hand.

Storage and leftovers

Sadly, hummus toast is one of those recipes where part of the recipe is able to be stored but other parts would be best served fresh.

Store any leftover roasted tomato slices in an airtight container in the fridge and use them within 3 days.

Make the toast and fried egg fresh.

  • Preheat oven to 425 degrees F.

  • Slice the tomato into 4 thick slices. Place on a small baking sheet and sprinkle both sides with kosher salt, black pepper, and ras el hanout.

  • Add the tomatoes to the preheated oven and bake for about 10 minutes or until the tomatoes are slightly soft and fragrant.

  • While the tomatoes roast, toast your bread and spread 2 tablespoons of Sabra original hummus on each slice of the bread.

  • Add 2 roasted tomato slices to each slice of bread.

  • In a small skillet add olive oil and place over medium-high heat. Fry both eggs until the desired doneness.

  • Add the egg to the toast and garnish with minced cilantro, crumbled feta cheese, black sesame seeds, and crushed red pepper.

  • Season with extra kosher salt or black pepper if needed.
