Lately I can’t get enough chaffles! This, in my opinion, is one of keto’s biggest accomplishments. A cheesy, savory waffle that can have any number of flavor combinations, can be eaten in the car when I’m in a hurry, AND can be frozen in batches so I never have to go without?! Yes, please!

If you’ve tried my Ham and Cheese Chaffles or the Pepperoni Pizza version, you know how this goes. They become nice and crispy on the outside, soft and fluffy on the inside. For a great snack, cut your chaffle up into triangles or sticks, then dip in ranch or evenjalapeno ranch if you want to up the spice! I like to add different toppings to mine, like these Keto BBQ Stacks.

This is a perfect way to use up leftover sausage (perhaps after making these Sausage Cream Cheese Pinwheels). This recipe is quick to cook, easy to clean up, and simple to meal prep. You’ll love this no-fuss, tasty recipe!

Keto Chaffle Ingredients

You can find specific measurements and instructions down below, but here’s a quick overview of what you’ll need:

  • Large eggs
  • Shredded Cheese: mozzarella or cheddar, or a mixture of the two.
  • Almond flour and Baking powder
  • Jalapeños: fresh, seeded and diced, or jarred jalapeños.

How do I make a Keto Chaffle?

These keto-friendly spicy waffles are so easy! In a mixing bowl, beat your eggs then fold in all remaining ingredients. Spoon this into your waffle maker and cook about 2-3 minutes. When there is no longer any steam coming from your waffle iron, they’re ready!

What kind of waffle maker do I need to make chaffles?

Any waffle iron will do! I personally love this one from Ms. Dash. I think the size is perfect, and this recipe makes five full, perfect waffles in this maker. These waffles are also about the size of a slice of bread, so you can make low carb sandwiches by using chaffles for sandwiches instead of bread!

Tips for making the best Keto Chaffles

These are so simple they don’t even really need tips, but here’s what I’ve learned…

  • Be careful not to overfill the waffle maker. In my experience, filling it about 2/3rd full is perfect! By the time it cooks, it has expanded just enough to fill the whole waffle iron.
  • If you know that you are going to reheat these in the oven or in a toaster, undercook them by maybe 30 seconds to a minute. This will help them become perfectly crispy after reheating instead of dried out.
  • Customize for your preference! This is my favorite thing about chaffles. It’s SO easy to make them fit your favorite flavors! Make your chaffle base with the eggs, cheese, flour, and baking powder, then add 3/4ths cup of whatever meat or veggie you prefer! Add 1/2-1 teaspoon of dried seasonings if you wish.

Can I meal prep and freeze low-carb chaffles?

Yes, chaffles are PERFECT for meal prepping! A batch will last up to 4 days in an air-tight container in a fridge or up to 4 months in the freezer. To freeze, allow waffles to cool completely, then place in a single layer on a plate or baking sheet. Allow to freeze for 2 hours, then place the frozen chaffles into a freezer bag or container.

What should I serve with Sausage Jalapeno Chaffles?

If you’re usually a toast person for breakfast, you can easily swap out your slice of bread for a tasty chaffle! This would be perfect low-carb side for steak and eggs, or you could make keto breakfast sandwiches, but use these chaffles instead of bagels. Ingredients

  • 2 large eggs
  • 3/4 cup shredded cheese I use a mixture of cheddar and mozzarella
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 3/4 cup cooked crumbled breakfast sausage
  • 2 tablespoons chopped jalapenos I used canned, but fresh works too

Instructions

  • While waffle iron is preheating, beat eggs in a mixing bowl. Fold in all remaining ingredients until well mixed.

  • Spoon mixture into the waffle iron, filling 2/3rds full. Allow to cook until there's no steam coming from the iron, about 2-3 minutes.

Notes

To keep finished chaffles warm while you cook the rest of the batter, store them in the oven or toaster oven at 200 degrees F.
