Rice Appeis the simplest and a quick savory snack from South India made with Rice and Urad Dal. Rice and Urad dal is washed and soaked overnight , then grind and ferment to make a savory batter. This batter can be used for making Dosai or Uttapam as well. Many variation can be done in this recipe making it even more fun and delectable. For example you can add finely chopped vegetables of your choice or even make stuffed appe. I usually place a small piece of cheese within the batter while making appe. This gives a gooey cheesy snack that pleases kids easily. Below mentioned is the ratio of Dal and Rice along with the method of making this delicious snack. If you have left over Idli/Dosa batter you can nicely use them for making Appe and serve it with any of your favorite chutney.
Crisp outside and spongy inside, Appe makes a great tiffin option for kids too considering the fact that it can be made with left over Idli/Dosa batter as well. Lets check out how to make simple Rice Appe. Firstly wash and soak rice and urad dal in fresh water and leave over night or minimum 4 hours. Drain water and grind to make a fine batter. Do not add much water as the batter should be thick enough like we make for Dosa. Collect the batter in a large container and leave it for 5-6 hours to ferment. Make sure you use a large vessel because the batter will rise while fermentation. Mix the fermented batter with a ladle and add salt as needed. Heat an Appe pan and add add 1-2 drops of oil in each socket. Once the oil is piping hot, add 1tbsp of batter in each socket. Simmer the gas and close lid. After a couple of minutes, flip the Appe balls and again add 1-2 drops of oil in each socket so that the appes are nicely fried from the other side as well. Once the appe are nicely crisp from outside, collect them in a plate and prepare the next batch. Serve them hot with your favorite chutney.

Recipe Notes
Few interesting variations made with Appe batter :
- Add fine chopped or grated veggies to the batter to make vegetable Appe.
- Mix coriander and mix paste to make flavorful Green Appe.
- Paneer/Aloo/Cheese stuffed Appe
- Add Spinach puree to make healthy Spinach Appe
