How do I make a no bake cheesecake recipe?

  1. Make the graham cracker crust.
  2. Fill your mini muffin baking cups with the crust. Freeze for 15 minutes.
  3. Make the cream cheese filling. Top the chilled crusts with the cream cheese filling.
  4. Add toppings like mini chocolate chips if you wish. Freeze until set.

The first step is to weigh the graham crackers. Six ounces is about right. Melt four tablespoons (2 ounces) of butter. Adding just a touch of brown sugar helps the texture and sweetness of the crust.

Pulse the graham crackers, melted butter, and brown sugar in a food processor.

Fill your mini muffin pan with mini paper baking cups. Scoop about one teaspoon out at a time and fill each baking cup.

Press down to compact the crust. Did you know that you can buy graham cracker crumbs? I was surprised when I saw them in the baking section. I still think it is so easy to make your own. Making your own gives you the flexibility to make a gluten free crust.

The cheesecake crust will hold up better if you really press down firmly on this graham cracker mixture. Put the pan in the freezer for 10-15 minutes. Meanwhile make the no bake cheesecake filling.

With a hand held mixer, beat the cream cheese, sweetened condensed milk, and vanilla on high for 2-3 minutes in a large bowl. Be sure to get all of the lumps out. If your cream cheese is lumpy, it might just be cold. Blend until the filling is smooth.

Fill each chilled crust with the cheesecake filling. I find that the Ziploc icing bag trick is perfect for this application. It’s as easy as it sounds– make a pastry bag out of a Ziploc bag for a quick and easy way to fill each mini cheesecake.

Ingredients

  • 6 ounces graham crackers (gluten free or traditional)
  • 2 ounces (4 tablespoons) butter, melted
  • 2 tablespoons brown sugar
  • 8 ounces cream cheese
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon pure vanilla extract

Instructions

Pulse the graham crackers, melted butter, and brown sugar in a food processor.

Fill mini muffin pans with mini baking cups. Press one teaspoon of graham cracker mixture into each mini baking cup. Press firmly. Put the mini muffin tray in the freezer for 15 minutes.

Make the cheesecake filling: Use a hand held mixer to beat the cream cheese, sweetened condensed milk and vanilla until smooth. Top each chilled crust with the cheesecake filling.

Add any toppings you wish (or leave plain) then place in the freezer for an hour to set.

Remove and let sit at room temperature for 10 minutes before serving.
