Pumpkin Patch Fudge

This is a nostalgic one for me. I remember going to the pumpkin patch as kids to pick out a pumpkin. The best part was getting fudge as a special treat. There’s just something so rich, so decadent about fudge. I love(d) that soft, sugary, chocolatey bite. Tiny bits of crystallized sugar that are almost crunchy, then dissolve instantly—who knows what I’m talking about?

This is based on my Mom’s easy microwave fudge—with all the low-carb swaps and twice the nostalgia. Of course, we’re going sugar free here—but you can expect full fudge satisfaction—with special thanks to Lily’s chocolate baking chips and the real sugar taste of today’s sweeteners (I prefer Swerve and Latanko.)

I love that I can whip up a batch of low carb fudge any time I like (because I’m a grown up!) I also love that it always still reminds me of those pumpkin patch days.

Ingredient Notes

5 ingredients are all you’ll need to make this keto fudge recipe. Here are a few you may have questions about:

  • The chocolate: You can make your own chocolate (check out my sugar-free recipe here) or grab a bag of Lily’s chocolate chips, which TBH is what I always do. Best prices at Walmart!
  • The sweetener:I prefer Swerve/Lakanto as keto sweeteners. Both can be used as a 1:1 swap with traditional sugar. If you’re using a different brand of erythritol, you may want to increase the amount added, as it’s 70% as sweet as sweet

Psst – I prefer to make low carb fudge with chocolate chips (rather than keto fudge recipe with cocoa powder), as the chips give you a softer, fluffier texture — cocoa powder absorbs liquid and dries recipes out.

Low Carb Fudge Mix-Ins

  • Chopped nuts – use your faves! My pick? Walnuts or pecans.
  • Coconut, shredded + unsweetened
  • Freeze-dried keto fruits, like strawberries or raspberries
  • Keto peanut butter – check out my keto peanut butter fudge and consider swirling the 2 together.
  • More chocolate! Stir in some sugar free white chocolate chips, or any of Lily’s flavors.

How to Make Keto Fudge:

  1. Microwave chocolate chips, heavy cream, and butter together at 50% power using 30-second intervals. Stir and repeat until the ingredients melt together completely. (Note: this can also be done in a double boiler, or a heat-safe bowl nestled over a saucepan with water)
  2. Add the sweetener, vanilla, and any mix-ins. Stir to combine.
  3. Pour keto chocolate fudge mixture into an 8×8 baking dish lined with parchment paper and smooth out the top.
  4. Toss in the refrigerator until set, at least 3 hours. (Speed up the process by placing your keto fudge in the freezer). Slice and enjoy!

Storing Sugar Free Fudge

Stash your sliced fudge in the fridge, OR (bonus points) in the freezer! If freezing, thaw in the fridge before digging in.

Ingredients

  • 3 Cups Sugar Free Chocolate Chips (note 1)
  • 14 Ounces Heavy Cream
  • 1/4 Cup Unsalted Butter
  • 1 Teaspoon Vanilla
  • 3/4 Cup Confectioners Swerve or Lakanto (note 2)
  • 1 1/2 Cup Keto Nuts chopped, optional. I love walnuts, almonds or pecans

Instructions

  • Prep. Line an 8x8" casserole dish with parchment paper.

  • Melt. Add sugar free chocolate chips (3 cups), heavy cream (14 Ounces), and unsalted butter (1/4 cup) to a large microwave-safe bowl. Microwave (note 3) for 1 1/2 minutes at 50% power. Stir ingredients to incorporate. Repeat using 30 second intervals until everything has melted together and your fudge has a smooth texture.

  • Stir in confectioners erythritol (3/4 cup), vanilla (1 teaspoon), and chopped nuts (1 1/2 cup).

  • Set. Pour fudge into your prepared baking dish and smooth the top using a rubber spatula. Place in the fridge and allow fudge to set for at least 3 hours. Cut fudge into 16 pieces and enjoy!

  2. Sweetener - This recipe was measured with Lakanto or Swerve. If using a different brand of erythritol, know that they're often 70% as sweet and you'll want to adjust accordingly. A simple taste test will do the trick!
