I hope everyone had a great Memorial Day. We spent the weekend with some family and friends, enjoying the lake, good food and warm weather.

The three day weekend was much needed – time to relax and recoup a bit. After being in Miami last weekend and going straight from having a sinus infection last week to waking up with strep throat Saturday morning, I needed the rest. Fortunately, the antibiotic kicked in quickly and other than slowing me down a bit Saturday, I was good to go!

I actually wanted to call this recipe “Man Bars.” That’s pretty much what I went around calling them when I got my taste testers involved. When I told the hubs that they were man bars, he said the only thing they were missing was motor oil.

Eww.

But then some of these bars’ greatest fans were not in fact men. I mean the men loved them, but women can and do love them too! So alas, the name “Man Bars” didn’t stick. However, I will still lovingly call them that on my own.

Instead, I went with a more descriptive name. Inviting for all. I don’t want anyone to feel left out.

But they are perfect for Father’s Day, aren’t they?! I mean what dad wouldn’t love to have a few of his favorite foods baked into a chocolate chip cookie? Mine would!

To be fair, not everyone loved these. They are a little different and the flavors can be a little strong. But if you’re a beer, bacon, potato chip and chocolate chip cookie fan and you think they’d all be delicious in one big mouthful, then these bars are for you! 🙂

Description

These Bacon, Beer and Potato Chip Cookie Bars are full of sweet and salty flair, plus all your favorite munchie-food guilty pleasures!

Ingredients

COOKIE

  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup dark brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 3/4 cup of chocolate chunks or chips
  • 2 pieces of bacon, chopped
  • 2 tbsp beer (I used Yuengling)

TOPPING

  • 8.5 oz caramels – about 27 caramels (I used Kraft Caramels)
  • 1/4 cup cup beer
  • 3/4 cup potato chips, broken into pieces
  • 1/4 cup pretzels, broken into pieces
  • 2 pieces of bacon, chopped
  • 1/2 cup peanut butter chips
  • 1/2 cup chocolate chips

CHOCOLATE DRIZZLE

  • 1/4 cup chocolate chips
  • 2 tsp milk

Instructions

1. Preheat oven to 350 degrees. Line a 9×9 pan with parchment paper or aluminum foil that sticks up above the edges.

2. Cream butter and sugar together until light and fluffy, about 3-4 minutes.

3. Mix in egg and vanilla extract.

4. With the mixer on low speed, add flour and baking soda.

5. Stir in chocolate chips, bacon and beer. Dough will be thick.

6. Press cookie dough evenly into the bottom of the pan.

7. Bake for 22-25 minutes or until the edges are slightly golden.

9. Remove from oven and allow to cool in the pan.

10. While bars are cooling, melt caramels and beer together in a pan over medium heat.

11. Allow caramel to cook on low for about 5-10 minutes.

12. Pour caramel mixture over cookie bars and spread evenly.

13. Pour potato chips, pretzels, bacon, peanut butter chips and chocolate chips evenly over caramel before it cools and hardens.

14. Microwave chocolate chips for chocolate drizzle and milk in a small bowl in the microwave until the milk begins to boil.

15. Whisk chocolate until smooth.

16. Allow chocolate mixture to cool for about 2 minutes, then drizzle over top of bars.

17. Once bars are cool, use parchment paper or foil to lift them out of the pan and cut into squares.
