These air fryer zucchini fries are an easy low carb and Keto appetizer your whole family will love! They taste great with a zesty sauce used for dipping, which makes it hard to stop eating them.

And trust me when I tell you that this sauce is amazing! It has such great flavor, you will want to use it with other dishes!

Preheat your air fryer, set it 400°F.

How to Cut Zucchini into Sticks or Fries

Wash, dry and cut both ends off each zucchini. Then cut the zucchini in half width-wise. Cut each half down the middle, length-wise. Then cut each of those halves into either 3 or 4 sticks, depending on how large or small your zucchini is.

Add the almond flour, parmesan cheese, ground pork rinds, oregano, parsley, basil, garlic salt and pepper into a bowl and whisk to combine.

To get a finer texture, I like to blend mine in a food processor.

Take the eggs and beat them in a shallow bowl. Dip each zucchini fry into the egg, allowing any excess egg to drip off.

Then dip them into the breading to get a thin coating.

Place the breaded fries in the basket of your air fryer. Spray them down with olive oil, I prefer to use this sprayer, rather than the aerosol store bought type.

While the fries are cooking, add all the zipping sauce ingredients into a small mixing bowl.

There's no question these low carb zucchini fries are best right after being cooked. That's when you'll get optimal crispiness. However, leftovers can be reheated and they taste delicious, even in the texture isn't the same.

To reheat, just place them back in the air fryer for just a few minutes until they have heated through.

🔄 Substitutions and Additions

  • For a smoky flavor, add in ½ teaspoon of smoked paprika
  • If you don't like pork rinds, you can substitute with equal amounts of almond flour and grated parmesan cheese
  • If you don't have parmesan cheese, you can use Romano or Asiago instead
  • If you don't have garlic salt, you can use equal amounts of garlic powder and salt
  • For a spicy kick of flavor, add in ¼-1/2 teaspoon of cayenne pepper

💡 Tips for Crispy Air Fryer Zucchini Fries

The gluten free breading in this zucchini fry recipe will crisp up really well but here are a few tips to help make sure you get that exterior crispiness you're looking for.

  • Smaller zucchini will have less water content. When selecting the ones you'll use, look for the younger, smaller zucchini.
  • The smaller the fry, the more breading surface. Large zucchini fries will tend to get a little soggy, so when you cut them up, make sure they are no larger than a traditional steak fry.
  • Don't pre-season the fries. Salt will begin to draw moisture out of the zucchini and it will make them more soggy when cooked.
  • If you choose to cook them in the oven, place them on the next to top rack position in the oven and watch them closely, turning them half way through baking time.
  • You can also pan fry these zucchini fries. If you opt for this method, use a high smoke point oil, like avocado oil, to ensure they do not take on a burned flavor.

How do you keep zucchini from getting soggy when frying?

Air frying them at a high temperature of 400°F really helps prevent them from getting soggy. The same is true for frying them in a skillet. You'll want to cook them at a high temperature and fairly quickly. Otherwise, if you cook them too low and slow, they will inevitably get soggy.
